Tortilla-less Spicy Chicken Tacos



As promised, here is a recipe for my tortilla-less spicy chicken tacos! They are fresh, delicious, and definitely save a substantial amount of calories by substituting romaine lettuce leaves. 1 whole-grain soft tortilla usually runs anywhere from 80 (low-carb versions) – 180 (regular 8-in tortilla) calories per tortilla. So if you buy regular whole grain tortillas from Kroger, Giant Eagle, or wherever you choose to shop, and have 2 tacos, you are eating about anywhere from 200-300 calories in just tortillas! This is also a great alternative if you are watching your carb intake (although I don’t really recommend doing that unless it is for serious health/medical reasons; JUST MY OPINION) or are using a more calorie-heavy or high-fat meat. I really hope you try these out! They are fabulous, I must say 🙂

Tortilla-less Spicy Chicken Tacos: serves 1

– 2 small chicken tenders (about 2 oz each), total 4 oz meat
– seasoning for chicken: garlic powder, black pepper, chili powder, red pepper flakes (just a pinch!), paprika
– 1/4 cup diced red pepper
– 1/4 cup diced avocado
– 1/8 cup diced onion (I used white but red is perfectly fine too)
– about 6-8 cherry tomatoes, cut into 4 pieces
– seasonings for veggies: dried basil, black pepper, lemon pepper seasoning, garlic powder
– 2-3 large romain lettuce leaves, rinsed
– 2 Tbsp. crumbled feta cheese

Season and grill you chicken tenders. While they are cooking, chop your veggies and add your seasonings. You want the juice from the tomatoes, so try to keep it as best you can when slicing them! Ones your chicken has finished cooking, let sit for about 2 minutes, then shred and add to your veggies. Put in the microwave for just about 25-30 seconds to help warm your veggies a little more. Spoon your filling evenly into your lettuce cups and top with a sprinkle of feta cheese! Enjoy!
