Ooey-Gooey Quinoa Mac n’ Cheese

Hello blog readers! I have been meaning to post this recipe for about 2 weeks, but job searching has been taking quite a big chunk out of my free time recently. I have been wanting to attempt a quinoa mac n’ cheese forΒ quite some time, but just never got around to it. If you are a fan of plant-powered food, this recipe is definitely for you! Cheesy, creamy, and flavorful, you will hardly missed that boxed mac n’ cheese at all!

Ooey-Gooey Quinoa Mac n’ Cheese

Ingredients:

  • 1/2 cup dry quinoa
  • 1 cup water

Bring water to a boil, add quinoa, then reduce to a sinner and cook with lid on until water is completely gone (about 10-15 minutes)

  • 1/4 cup unsweetened soy milk
  • 1/2 cup butternut squash puree
  • 1/2 cup reduced fat shredded cheddar cheese
  • 1 Tbsp Dijon mustard
  • 1/2 tsp black pepper
  • 1/4 cup frozen peas,
  • 1/2 cup frozen broccoli

Once your quinoa has soaked up all of the water, add the soy milk, butternut squash, mustard, cheese, and black pepper. Give the quinoa about 3-5 minutes over low heatΒ to absorb the flavor and moisture from these ingredients, then add your frozen peas and broccoli. Allow about 5 minutes for the peas and broccoli to thaw and heat through. Serve with a little extra sprinkle of cheese at the end, and enjoy!
