Hello there everyone! Took me a while to get this one posted, but with good reason! I am now living in Arizona. Big, BIG change in environment, but the move is done and I’m slowly getting use to everything. I am definitely excited to see what Arizona has to offer food-wise! I have been trying to fine out what food Arizona is known for growing, so if anyone know, please tell me! So far I have heard citrus fruits, but still no definite answer.
I made this recipe before I left for the move because days were hectic, and I needed a snack that was quick, easy, and would help me plow through packing and getting last little minute things taken care of. I had seen recipes for “power,” “energy,” or “protein-balls” all over Pinterest, but as always, I wanted to try making one up on my own so here is what I came up with! In general, if you are going to make some sort of energy bite or ball, you need 3 things to start you off: a dry base, typically oats, a wet base, such as peanut butter or another nut butter, and a sweetener, such as honey or agave syrup. Have fun, get creative, and blend flavors that are your fav to make your perfect energy bite! Oh yes… and there is no baking needed!
Raw Choco-Nutter Coconut Bites
Ingredients: Makes 15 balls about the size of a buckeye
- 1 cup oats
- 1/2 cup chunky organic peanut butter (or any other type of nut butter you prefer)
- 1/4 cup honey (or agave syrup; I just prefer the taste of honey)
- 2 tsp unsweetened cocoa
- 1/4 tsp cinnamon
- 2 Tbsp chopped almonds
- 2 Tbsp unsweetened coconut (+coconut to roll them in)
Combine all ingredients in a large bowl. Make sure all dry ingredients are moistened by the nut butter and honey. Firmly press the ingredients between your palms, forming a small compact ball. Roll each ball in shredded coconut (make sure you press it down a little), then place in the refrigerator to chill before eating! I kept mine in the refrigerator for the week. I think they hold up better and taste good a little cold! Enjoy 🙂
