Vanilla Chia Breakfast Pudding

Sick of your every day breakfast routine? Try my Vanilla Chia Pudding for a little change in your morning meal. The texture isn’t for everyone, but you’ll never know unless you try! Also, it’s just so darn pretty! Top your pudding with whatever topping you’d like such as frozen fruit, granola, nuts, cinnamon, honey, peanut butter, etc. The best part about this recipe? It is made ahead, so the next morning your breakfast can be assembled quickly in about 5 minutes and even taken on the go if needed. Give this recipe a try and let me know what you think. Enjoy!

Recipe yields 1-2 servings


  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup chia seeds
  • 1/4-1/2 tsp vanilla (depending on how strong you’d like the vanilla flavor to be)
  • drizzle of honey
  • cinnamon to taste
  • toppings shown in picture: frozen blueberries, raspberries, slivered almonds, cinnamon

Add your chia seeds, milk, cinnamon, vanilla, and honey in a small jar or bowl. Shake ingredients to assure the seeds are covered in milk. Cover or add a lid, and place in refrigerator overnight. In the morning, give your putting a quick stir to assure the seeds have gelled, add your toppings, and you are ready to eat!
